Roasted tomato soup with smoked garlic & parmesan: D.e.l.i.c.i.o.u.s!
It is easy to make from scratch but Big Mamma tends to keep a few cans of Baxters roast tomato with parmesan and smoked garlic soup in the cupboard in case of emergencies. The kids LOVE it with a slice of buttered wholemeal toast.
If making from scratch, you can just roast the garlic whole with the tomatoes on a baking tray, the garlic will puree inside the shell and you just squeeze it out.

Baxters soup can be found in most supermarkets and this can costs around £1.50 from ASDA and £1.79 from Waitrose and Sainsbury’s. If you don’t want to go to the expense of buying parmesan in, grated cheddar will do.
