Have you heard about the Cheagan diet? Supposedly two days a week without meat or dairy ingredients is good for us.
Now, I never suggest anyone take up a new ‘diet’ however I have always included one or two meatless dishes in each of my weekly meal plans. Both nutritionally and financially your family will benefit since pulses like chickpeas are much cheaper and a good regular nutrient substitute for meat.
This week’s family meal planner includes chicken escalopes, spaghetti bolognese, Mexican chilli bean soup, lemon zesty fish fillets and store cupboard pizza with spicy wedges and salad. The approximate cost is just £19.31 for a family of four! (price correct at time of publication – supermarket prices and offers may vary – exclusive of store cupboard staples).
Chicken escalopes served with spinach, sweetcorn and boiled baby potatoes. Save money and buy a small fillet each (as they appear bigger when flattened) or save the extra for lunch the next day. Approx price: £4.73 or £1.18 per portion.
Quick spaghetti bolognese: Make with lean mince and add a tin of butter beans to stretch the meal. Approx price: £2.75 or 68p per portion
Mexican chilli bean soup: This weary Wednesday meal – made in one pot and absolutely delicious. It’s meatless and if served with natural yoghurt becomes a vegan meal. Approx price: £5 or 83p per portion.
Lemon zesty fish fillets: This refreshing dish can be served between two halves of toasted whole-wheat buns topped with salad and tartar sauce – yummy, healthy and quick. Approx price: £2.33 or 58p per portion.
