It was National Chip week last week. And in celebration of the humble potato, (23rd August National Potato day is too far away) unusually my this meal plan includes a potato dish everyday. Store in a cool, dark place and as most of the nutrients are found in or just below the skin, cook with their skins on or peel very thinly.
This week’s family meal planner includes mini burgers with spicy potato wedges, turkey and ham potato pie, baked potato with cream cheese and green beans, chowder (mixed fish) and lentil, potato and chickpea curry. Mini burgers with spicy potato wedges and coleslaw: A firm favourite with every member of the family. As the family is older now, I tend to make 4 normal size burgers, using the same recipe but obviously cooking the burgers for a little longer. Since I am serving potato wedges, quickly brown the burgers in a pan and continue cooking in the oven. Approx price: £3.89 or 65p per portion.
Turkey and ham potato pie with mixed vegetables: Turkey is great value these days. Cut into small bite size pieces to cook very quickly. Alternatively use leftover cooked roast chicken slices instead of the turkey. Approx price: £5.15 or £1.29 per portion.
Baked potatoes with cream cheese and steamed green beans: Baked potatoes do take time to cook but they are delicious. Choose a day that you have the time, alternatively bake the night before as you cook the potato wedges and simply reheat in the microwave next day. The filling is delicious but if you wish fill with baked beans, tuna or salmon. Approx price: £3 or 75p per portion.
Chowder (mixed fish): Fast and easy, this meal is nutritious, comforting and delicious. Serve with crusty brown bread. Approx price: £4.72 or £1.18 per portion.
Lentil, potato and chickpea curry: End the week with this almost one-pot wonder, there is very little preparation required and you should have enough leftovers for lunch on Saturday. Approx price: £3.36 or 84p per portion.
