Meal plan – summer sizzlers

Summer is finally here! Even if you’re not a big fan of barbecues, its nice to be able to sit and eat outdoors. The meal plan for this week is all about good healthy food that you can prepare in advance or make quickly, in order to get out and enjoy more of the sunshine.

This week’s family meal planner includes lamb koftas, fish goujons, chicken fajita wraps, chickpea burgers and store cupboard pizza.

  • Lamb koftas: Definitely prepare koftas a few hours before cooking. Serve with crusty bread and loads of crunchy salad. Lamb is still at a fairly good price at the moment, but use pork or beef if preferred.

  • fish goujons
  • Fish goujons with homemade chipped potatoes: Nothing quite like sitting by the seaside and tucking in to some traditional fish and chips wrapped in greaseproof paper, smothered in vinegar and tartar sauce! At home you can try coley fish with this recipe for better value.

  • chicken fajita wraps
  • Chicken fajita wraps: Handy cooking, handy eating. Let everyone grab their own wraps and fill as they want. Use de-boned chicken thighs for better value for leftover chicken from the Sunday roast.

  • chickpea burgers
  • Chickpea burger with warm pitta bread and tomato chutney: Great value meal that can be prepared in advance and enjoyed out in the sun!

  • pizza
  • Store cupboard pizza: Make the dough in advance and make the pizza just before you need to dine. Top with anything from the store and fridge.
