I’ve included this recipe to encourage children to start baking and cooking. It’s a very easy recipe and quite yummy. Learning to measure using spoons at a younger age is far more rewarding than adults measuring for them. A good time to spend baking with the children is on a Sunday when the oven is already on, cooking the Sunday dinner.

Ingredients
- 3 tblsp soft butter or flora green
- 4 tblsp brown sugar
- 1 medium egg
- 8 tblsp plain flour
- 2 tsp baking powder
- 1 orange rind
- 2 bananas
- 2 tblsp walnuts
Method
- Oven temperature: 350F - 180C - Gas Mark 4 - Moderate
- Pre heat oven 180c / gas 4 and place 12 muffin cases into a muffin tin
- Place softened butter, sugar and egg into a bowl
- Add sieved flour and baking powder. Beat until soft and creamy
- Add orange rind
- Mash bananas and add to mixture along with walnuts. Stir gently
- Spoon into muffin cases and cook for 15 minutes or until golden brown and cake springs back when pressed
