Banana muffins



banana muffinI’ve included this recipe to encourage children to start baking and cooking. It’s a very easy recipe and quite yummy.  Learning to measure using spoons at a younger age is far more rewarding than adults measuring for them. A good time to spend baking with the children is on a Sunday when the oven is already on, cooking the Sunday dinner.

Total Time: 35 minutes

Ingredients

  • 3 tblsp soft butter or flora green
  • 4 tblsp brown sugar
  • 1 medium egg
  • 8 tblsp plain flour
  • 2 tsp baking powder
  • 1 orange rind
  • 2 bananas
  • 2 tblsp walnuts

Method

  • Oven temperature: 350F - 180C - Gas Mark 4 - Moderate
  • Pre heat oven 180c / gas 4 and place 12 muffin cases into a muffin tin
  • Place softened butter, sugar and egg into a bowl
  • Add sieved flour and baking powder. Beat until soft and creamy
  • Add orange rind
  • Mash bananas and add to mixture along with walnuts. Stir gently
  • Spoon into muffin cases and cook for 15 minutes or until golden brown and cake springs back when pressed
