A special treat, this lovely light chocolate steam pudding can be made in advance and then heated up again when you want. Reheat the individual puddings for 40 seconds or for a large pudding, around 1 minute 20 second in the microwave.

Ingredients
- 170 g self raising flour (sieved)
- 1/2 tsp baking powder
- 55 g drinking chocolate or cocoa
- 225 g butter or Flora green
- 225 g caster sugar
- 4 medium eggs (beaten)
- 225 g dark cooking chocolate
- 300 ml cream
Method
Oven Temperature: 325F - 160C - Gas Mark 3 - Moderate
- Beat all ingredients (except cooking chocolate and cream) in a bowl until soft and creamy.
- ¾ fill a greased 2lb pudding bowl with the mixture and cover with cling film and foil
- Steam in a sacuepan of water with lid for 3 hours
- Check the level of water 2-3 times
- Alternatively divide mixture between 8-10 greased ramekins
- Place in a dish with 1/2 filled with water
- Cover container with foil and steam in oven for approx 45 -50 minutes at 160c or until cooked
- Chocolate Sauce - melt chocolate and cream in a saucepan or a microwave, bring to boil and stir very well
- Remove puddings from dishes, turn upside down and pour over chocolate sauce, serve
