Pasta salad with sun-dried tomatoes, rocket and walnuts


pastaThis recipe has been created by Catriona. Use fresh pasta in this very simple colourful side dish and use leftover for lunch during the week.

Total Time: 20 minutes


  • 60 g pasta
  • 3 sun-dried tomatoes
  • 1 tblsp low fat fromage frais
  • 1 tblsp grated parmesan
  • Pinch dried basil
  • Pinch oregano (dried)
  • Handful rocket
  • 15 g walnuts


  • Cook the pasta following package directions
  • Meanwhile, put the sun-dried tomatoes in a bowl and just cover with boiling
  • water. Set aside to rehydrate for 10 minutes, then chop into 1 cm pieces
  • Once the pasta is cooked and drained, stir in the rest of the ingredients. This can be served warm or at room temperature
