Teriyaki vegetable stir fry and rice



teriyaki vegetable stir fryThe delicious and unique flavours of Teriyaki sauce originate from Japan, and have been westernised loosing some of its flavour. For a quick and easy dinner for the family I have saved time and opted for a ready made sauce. Once the jar is open it keeps in a fridge for a number of weeks.

Serves: 4

Total time: 40 minutes

Ingredients

  • 2 peppers - deseeded and sliced finely
  • 1 onions (sliced)
  • 6 mushrooms (sliced)
  • ¼ bag green beans (cut diagonally in to 3cm)
  • 1 courgette (top and tail. Slice)
  • 4 tblsp teriyaki sauce
  • 50 g rice
  • 2 tsp oil
  • 1 knob butter

Method

  • Saute vegetables in a hot frying pan or wok, with oil and butter
  • Add seasoning and teriyaki sauce
  • Cook rice in double amount of cold water
  • Bring to boil
  • Place a tightly fitting lid on the pan
  • Take off the heat and leave with lid on for 25 minutes
  • By this time the water will have been absorbed by the rice
  • Mix rice and vegetable mix together. Serve in warm bowls
