Vegetable rice

Add different spices such as cumin, turmeric and paprika to spice up a plain enough dish. Use up fresh or frozen vegetables.

Serves: 4

Total time: 20 minutes


  • 1 tablespoon olive oil (or use spray oil)
  • 1 onion
  • 1 red pepper
  • 4 tablespoon frozen green peas
  • 2 cup cooked rice


  • Peel and dice onion finely
  • Core, de-seed and dice the red pepper
  • Heat oil in a frying pan, add onions and gently fry for 3 minutes
  • Add peppers and cook for a further 3 minutes
  • Add peas and rice, stir continuously for 5 - 7 minutes until piping hot
