Add different spices such as cumin, turmeric and paprika to spice up a plain enough dish. Use up fresh or frozen vegetables.

Ingredients
- 1 tablespoon olive oil (or use spray oil)
- 1 onion
- 1 red pepper
- 4 tablespoon frozen green peas
- 2 cup cooked rice
Method
- Peel and dice onion finely
- Core, de-seed and dice the red pepper
- Heat oil in a frying pan, add onions and gently fry for 3 minutes
- Add peppers and cook for a further 3 minutes
- Add peas and rice, stir continuously for 5 - 7 minutes until piping hot
