Yippee! I love the back to school routine and it shows in this week’s meal plan. Wednesday seemingly is the worst day for getting a home cooked meal on the table. So guess what? That’s not going happen this week as I’ve chosen Monday to cook a recipe which will give me two meals. Roll on Wednesday – I’m ready! The rest of the week is full of delicious veggies and easy cooking. Enjoy.
This week’s family meal planner includes spaghetti bolognese, lentil, potato and chickpea curry, lasagne, cauliflower pasta gratin and fish with butter bean, chorizo and tomato cassoulet with a dip in dip out salad. Lasagne: It doesn’t take much more effort to cook an extra meal for Wednesday. I often prepare the vegetables on Sunday and store them between layers of damp kitchen paper in an airtight container in the fridge. The Lasagne should be cooked on Monday as I find the lasagne curls up otherwise. Approx price: £6.39 for this two for one recipe around 79p per portion.
Lentil, potato and chickpea curry: A firm favourite for all the family. Cook extra rice and serve leftover for lunch the next day. Approx price: £3.86 in total or 96p per portion.
Spaghetti bolognese: Leftover from your two meals in one on Monday this spaghetti bolognese will be super quick to prepare this week. Approx price: £6.39 for this two for one recipe around 79p per portion.
Cauliflower pasta gratin: The rest of the cauliflower from the curry will be used up in this dish along with store food items. Serve will leftovers if you have any or add a tin of tuna or salmon. A really cheap wholesome meal. Approx price: £2.88 or 72p per portion.
Fish with butter bean, chorizo and tomato cassoulet: Chunky fish dish served in a delicious sauce. Adding fresh or frozen green vegetables will add extra nutrients. Approx price: £5.99 or £1.50 per portion.
