Meal plan – beef and vegetables


Meat is a rich source of protein, but we shouldn’t abuse eating it. This week’s meal plan combines beef recipes with vegetables, both fresh and frozen, which give us micro nutrients vital to our wellness today and in the long term. The more variety we eat the better.

This week’s family meal planner includes beef stew and beef pie with shredded steamed cabbage, vegetable broth with focaccia bread, tandoori chicken with salad and spicy potato edges, potato and pea curry, salmon fish cakes with dip in dip out salad and cheese and winter vegetable pie.

  • 2for1 beef stew and beef pie
  • Beef stew and beef pie with shredded steemed cabbage: Cook once and get two meals! Meal 1: beef stew – always delicious, give it plenty of time to simmer so the the meat is really soft. Meal 2: beef pie – simply place the leftover stew in a pie dish or individual pie dishes (foil ones are ideal). Approx price: £7.49 or 93p per portion.

  • Vegetable broth with focaccia bread: This broth is delicious wholesome and fairly quick to make. Approx price: £5.93 or £1.48 per portion.

  • Tandoori chicken
  • Tandoori chicken with dip in dip out salad and spicy potato wedges: The tandoori chicken is easy to make and so of course is the salad. Pop the wedges into the oven along with the chicken. Approx price: £6.35 or £1.50 per portion.

  • Potato and pea curry:  This is a great recipe for using up leftover vegetables. Approx price: £3.57 or 98p per portion.

  • Salmon fish cakes with dip in dip out salad and sweet chilli sauce: It’s a good value wholesome meal as long as it’s served with vegetables or a salad. No need for potatoes because the carbohydrates are in the cakes. Approx price: £4.95 or £1.23 per portion.

  • Cheese and winter vegetable pie: This comforting winter pie is both nutritious and cheap. It can be substituted for any vegetables you might already have available in the kitchen or freezer. Approx price: £4.39 or £1.09 per portion.
