A recent UK poll revealed that 1 in 20 modern mums with children under the age of 5 cook 9 or 10 different meals for their fussy family throughout the day. Our own survey ‘Five Million Mums’ discovered much happier cooks with over 70% of mums confident with their cooking skills and happy to get help organising meals. With that thought, I hope both mums and dads like my mealtime suggestions for this week.

This week’s family meal planner includes Mexican mince, chicken escalopes, fisherman’s pie,  goats’ cheese and spinach tartlets and vegetarian pasta bake.

  • Mexican mince: Make this as hot as you want by reducing the amount of chilli powder or adding slightly more. To reduce the cost of the meal, cut down on the meat and add a tin of kidney beans. Serve with a colourful salad.

  • chicken escalopes
  • Chicken escalopes: Reduce the cost of this dish dramatically by using 2 large fillets instead of 4. Serve with vegetable rice and plenty of dressed salad.

  • fishermans pie
  • Fisherman’s pie: Delicious pie! Reduce the cost by halving the amount of prawns and adding a small packet of mixed frozen vegetables.

  • Goats’ cheese and spinach tartlet: Add mushrooms or onions and diced ham or cooked bacon instead of goats’ cheese to cut  down on cost or if the children don’t like goats’ cheese.

  • vegetable pasta bake
  • Vegetable pasta bake: This is a great green day recipe. Save money by using store cupboard ingredients and leftover cooked and uncooked fresh ingredients in the fridge.
