This week’s meal plan brings lots of Mediterranean and Mexican flavours to the table – with a total of 8 peppers on the list. Try cutting down to 6 and seeing how it fairs out towards the end of the week.

This week’s family meal planner includes chicken fajita wraps, spicy lamb mince tacos, stuffed peppers, tomato, pasta and cheese melt and store cupboard pizza.

  • Chicken fajita wraps: This is a firm favourite in my house. You can try cutting down on the amount of chicken fillets you use, or perhaps try turkey for a change to reduce costs further. Serve with potato wedges.

  • spicy lamb tacos
  • Spicy lamb mince tacos: With lamb being in season, there are sure to be some good deals on at your local supermarket. Try it instead with chicken, beef, pork or turkey mince to reduce cost.

  • stuffed peppers
  • Stuffed peppers: The Mediterranean diet is the best diet of all. These peppers are delicious hot or cold and cheap to make if you omit the pine nuts and add peanuts instead.

  • tomato pasta and cheese melt
  • Tuna, pasta and cheese melt: Add a tin of tuna, salmon or drained chickpeas to this recipe to make a more wholesome meal.

  • pizza
  • Store cupboard pizza: The meal plan this week is quite thrifty, so you may have to get creative with your toppings. Why not try drained pineapple or olives and ham that you may have leftover in your store cupboard? Serve with lots of salad.
