No potatoes in this week’s meal plan, simply because of the rising prices. Once a staple ingredient on UK and Irish tables, the poor weather conditions have affected supply and demand of this humble and versatile ingredient.
This week’s family meal planner includes lamb tikka kebabs, chicken and prawn laska, tomato and cheese melt, sweet and spicy salmon and pork, tomato and sweet potato casserole.
Lamb tikka kebabs: Local lamb is at its sweetest and most tender at the moment, but you can also use chicken, pork or frying steak. This recipe is delicious cooked inside on a milder summer day or on a barbecue on the warmer days. Serve with loads of fresh salad.
Chicken and prawn laska: Because of the milder flavour, this is a good dish to introduce to younger members of the family. Serve with rice or noodles.
Tomato, pasta and cheese melt: Always include a store cupboard / leftover day meal into your meal plan. This week to save money, make your own tomato sauce with a tin of tomatoes that cost as little as 50p. Add frozen or fresh vegetables and any ingredient leftover from the four meals planned for this week.
Sweet and spicy salmon: Salmon is still in season, so relatively good value. Alternatively substitute for a cheaper white fish or reduce the size or number of portions to fit in with your family needs.
Pork, tomato and sweet potato casserole: This recipe makes ample for a family of four with some left over. Serve with rice and freeze the leftovers for another day. Or eat for lunch the following day.
