Quick spaghetti bolognese: A quick tip here is to add up to 150mls red wine if you have any leftover after Christmas. Wine gives a rich flavour to the sauce but will need to simmer for at least 20 minutes longer. Approx price: £2.75 or 69p per portion.
Chicken fajita wraps with potato wedges: Say no to chips for your family. Potato wedges are virtually zero empty calories when you use olive oil sparingly. Approx price: £5.75 or £1.44 per portion.
Vegetarian curry with wholegrain rice: Besides being a delicious, easy recipe it is extremely healthy and easily digested. Don’t forget you always have the option to add a couple of diced chicken fillets into the curry at the same time as the curry paste is added. Approx price: £6.66 or £1.67 per portion.
Cauliflower pasta gratin: Yummy leftover dish. Pop in extra vegetables like peas, corn and even diced ham etc. Try using half low fat cheddar cheese and half low fat mozzarella cheese to cut calories. Approx price: £2.88 or 72p per portion.
Fish chowder with wholegrain brown bread: Look out for fresh or frozen bags of seafood, what is an easy way to add variety into the chowder without compromising nutrient value. Approx price: £4.72 or £1.18 per portion.
