This week’s family meal planner includes chicken escalopes, bolognese, lentil curry, fish goujons, cauliflower pasta gratin and rhubarb crumble.

  • Chicken escalopes: Easy to make breadcrumb covered chicken. Save money and flatten the meat to make it go further. Serve with cabbage and grated carrot along with spicy wedges.

  • Bolognese, spinach and pasta: You can reduce the cost of this dish by using less mince and topping up with an extra tin of tomatoes and 50g of lentils. Spinach frozen in portion sizes is also great value. Just drop in about 15 minutes before serving,letting it melt into the sauce and turning up the heat for 5 minutes.

  • Lentil, potato and chickpea curry: A healthy, versatile recipe that can be whipped up without any fuss. Add a tin of coconut milk to the recipe and divide into 6 -8 portions. Saving you time if you freeze 2 -4 portions for another day.

  • Fish goujons with dip-in-dip-out salad: The fish is coated in a crisp, golden batter that kids will love. A fraction of the cost of a takeaway and just as delicious!

  • Cauliflower pasta gratin: This is great recipe to use up leftovers and reduce your waste, saving you money in the process. Deliciously comforting, serve alone or with meat or fish.
