This week’s family meal planner includes lentil and cheese burgers, shredded chicken quesadillas, pasta provencale, mexican chilli and lime burgers and fish with butter bean and tomato cassoulet. Lentil and cheese burgers: If possible, do the prep for these the day before or at least cook the lentils when you’re making Sunday lunch. These burgers are delicious, so cheap to make and so nutritious. Serve with salad. Approx price: £2.62 or 66p per portion.
Shredded chicken quesadillas: This is a new recipe. It’s basically a hot tortilla sandwich cut into quarters. Each sandwich serves two people. Just be careful sliding the tortilla sandwich out of the pan and onto the baking sheet. A shallow pan is best. Approx price: £8.61 or £2.15 per portion.
Pasta provencale: Wednesday has been declared the hardest time for choosing a home cooked meal, so this week just make a simple pasta dish. Use whatever leftovers you have to add extra flavours. Approx price: £3.13 or 78p per portion.
Mexican chilli and lime burgers: There is nothing wrong with reducing the amount of meat in this recipe and adding a tin of drained chickpeas or kidney beans. Save money and add some extra nutrition. Serve with cranberry power salad and tortilla chips. Approx price: £2.54 or 64p per portion.
Fish with butter bean, chorizo and tomato cassoulet: Nice and easy, chunky fish to finish a busy week. Frozen fish is quite acceptable as long as it is defrosted in the fridge. Serve with baby potatoes. Approx price: £5.99 or £1.50 per portion.
