Meal plan – wholesome family recipes


A poll, conducted by Change4Life found three in five mums no longer prepare and eat a meal with their families on Sundays. Hopefully the delicious and affordable roast pork in this week’s meal plan will entice more mums to try it. ‘Stay at home Sundays’ are a good way of eating together as a family, cheaper than eating out and an opportunity to pass on some cooking skills.

This week’s family meal planner includes roast pork, chicken fajitas, beef stroganoff, tuna pasta bake and cheese omelette.

  • Roast pork with cider gravy: There’s nothing nicer than perfectly cooked roast pork with roast potatoes, apple sauce and lemon and  herb butter stuffing. Try it with cider gravy or use vegetable or chicken stock instead. Serve with cabbage and grated carrot.

  • Chicken fajita wraps: If you have young people at home these delicious fajitas are easy and quick to make and without much persuading you could get a night off whilst they get stuck into preparing and cooking.

  • Beef stroganoff and fragrant rice: This simple dish is usually made with the best cut of beef which allows for quick cooking. Alternatively use sliced cooked beef from the Sunday roast or slices of cooked beef from the deli counter. Serve with sweetcorn and spinach.

  • Tuna pasta bake: A really easy recipe for all the family to enjoy and to get that all important omega 3. Delicious served piping hot with root vegetables such as cabbage and grated carrots or just a crisp salad.

  • Cheese omelette: Omelettes are simple to make and easy to digest too. Add grated cheese before you fold the omelette in half and any leftover ingredients like cooked chicken, ham, mushrooms, onions peppers etc for extra flavour.

  • Cupcakes: Deliciously light, fluffy cupcakes. You can experiment with this recipe to make all sorts of different flavoured cupcakes. Remember to only fill the cases half full as they can overflow as they rise!
