3 Rashers of streaky back bacon – smoked
1 Medium red onion, finely chopped
1 Clove garlic, chopped
1 Sprig of rosemary, chopped
1 Stick of celery finely chopped
1/2 Red pepper, chopped
1/2 Yellow pepper, chopped
1/2 Tsp of paprika
400g tin of chopped tomatoes
1 Cup of green lentils
1.5 Pints of chicken stock
Salt & pepper to taste
- Slice bacon into small pieces and fry in a little olive oil with garlic onion and rosemary on a medium heat until bacon is cooked through and onions have softened.
- Add peppers and celery and fry for 3-5 minutes. Add paprika, tomatoes and lentils and stir.
- Add chicken stock, salt & pepper, give it a stir and simmer on a low heat for 30-40 mins. Leave to cool. Blend 1/2 of soup liquid in blender until smooth, re-add to pan and reheat to serve.
