Bolognese, spinach and pasta


Mixing the pasta into the sauce keeps the pasta from drying out and the spinach added at the last minute and topping with cheese, creates a nutritionally balanced meal.

  • 2 tsp olive oil rapeseed oil is an excellent alternative
  • 1 onion (peeled and sliced)
  • 2 carrots (washed and finely diced)
  • 1/2 red pepper
  • 1 tin tomatoes
  • 50g parmesan cheese grated or sliced
  • 1/2 pack spinach
  • 8 basil leaves
  • 500 g lean minced beef
  • 2 pinch grated nutmeg
  • 400 ml beef stock


  • Heat oil in a heavy based saucepan, fry onions, peppers and carrots until slightly softened
  • Remove from saucepan, add mince and fry until lightly brown
  • Return cooked vegetable to saucepan. Add the rest of the ingredients except for basil, seasoning and parmesan cheese
  • Cook gently for 15 – 20 minutes or until sauce has reduced a little. Taste and season as required
  • Cook pasta in boiling water for 20 minutes. Drain and add to bolgnese sauce
  • Stir in torn basil leaves and spinach. Stir gently until you can hardly see the spinach
  • Serve in warm bowls top with parmesan cheese
