braised red cabbageA delicious sweet and sour dish with a vibrant colour to grace any hot meat recipe. Also delicious served cold as a salad with quiche or plate of cold meat.

 

 

 

Total time: 100 minutes

Ingredients

  • 1 teaspoon Allspice
  • 250g onions (grated)
  • 500g red cabbage (shred finely)
  • 1 clove garlic (peeled and crushed)
  • 250g apples (red eating apples, grated)
  • 2 tablespoon wine vinegar
  • 2 tablespoon brown sugar (light brown sugar)

Method

  • Preheat Oven
  • Oven Temperature: 300ºF – 150ºC – Gas Mark 2 – Cool
  • Pre-heat oven to 150c (Gas 2)
  • Wash, shred finely and arrange a layer of cabbage in the base of a large casserole
  • Peel and slice onions and apples
  • Layer them with crushed garlic, spices, sugar, and season
  • Continue to alternate the layers until all ingredients are used
  • Pour over the red wine vinegar
  • Cover with foil
  • Bake for 90 minutes or until cooked
  • Stir two or three times
