grated carrotStir fried cabbage is more nutritious than boiled as it retains the Vitamin C. Adding grated carrots at the last minute creates a splash of colour and goes further than just chopping carrots.

Ingredients

  • 250 g cabbage
  • 3 carrots
  • 2 tsp olive oil
  • 1 pinch seasoning
  • 1 pinch nutmeg (ground)

Instructions

  • Finely slice cabbage and grate carrots
  • Heat oil in a wok
  • Add cabbage, cook for 5-7 minutes, tossing frequently, using tongs
  • Season and sprinkle with pinch of nutmeg. Add carrots just before serving, mix in thoroughly
  • Serve immediately
