Caramelised milk pudding

Milk puddings are having a come back and about time. Comforting, cheap and nutritious. This dessert has just a little something extra which places it in the ‘super pud’ league. Get children to start enjoying the trad puddings as they are far more nutritious than cold over sweetened yoghurts they all seem to like so much.

Total time: 40 minutes

Ingredients

  • 60 g rice shortgrain raw
  • 500 mls milk
  • 50 g demarara sugar
  • 100 mls greek yoghurt
  • 1/2 teaspoon cinnamon

Method

  • Place the rice and milk in a saucepan. Bring to boil, turn down heat and simmer very gently until the rice is cooked. Stir very regularly after 10 minutes to make sure that the milk does not burn on the bottom of the saucepan
  • Stir in half the sugar, the Greek yoghurt and the cinnamon. Divide into 4 or 5 dishes
  • Sprinkle each dish with the rest of the sugar. Place under a grill or use a chef’s torch to caramelize the sugar
  • Serve on its own or with sliced pears or stewed apples
