cassouletAs the days draw colder this hearty cassoulet is perfect for an autumn evening. Easy to prepare and the whole family are sure to enjoy it.

 

 

 

Ingredients

  • 150 g streaky bacon (diced)
  • 8 pork sausages (cut into 2.5 cm pieces)
  • 400g Harricot or white beans (1 tin drained and rinsed)
  • 4 celery sticks (sliced)
  • 1 small onion (diced)
  • 2 large carrots (sliced)
  • 4 glove garlic
  • Bouquet garnet (optional)
  • 1.5 l water

Method

  • Heat olive oil in a large saucepan
  • Fry onions, carrots, garlic (left whole) and celery until golden brown
  • Add the rest of the ingredients to the pan and bring to boil
  • Cook slowly for 1.5 – 2 hrs until thick and creamy
