Deliciously comforting and especially welcoming on the purse. Serve on its own or with slices of hot or cold meat or fish.

Ingredients

  • 120 g macaroni dry
  • 1 cauliflower
  • 30g butter
  • 30g plain flour
  • 1 teaspoon dry mustard (optional)
  • 600 mls milk
  • 180g cheese
  • 100g breadcrumbs

Method

  • Cook the macaroni in boiling salted water for 15 minutes approx or until cooked
  • Whilst the pasta is cooking, trim leaves off the cauliflower, cut the cauliflower into 8 pieces
  • Cook in a pan with enough water to come up to half the vegetable pieces for 10 minutes or until tender
  • Grate the cheese
  • To make the sauce – melt the butter in a saucepan, add the flour, stir thoroughly. Off the heat, add the milk a little at a time until all the milk is absorbed by the roux
  • Drain the pasta and the cauliflower, place in a heatproof dish. Add the cheese to the sauce, pour gently over the pasta and cauliflower
  • Sprinkle with the breadcrumbs
  • Toast in the oven or under the grill until golden brown
