Chicken and broccoli stir fry with pan fried banana

The sweetness of the banana brings an unusual dimension to this very healthy and fast recipe. Omit the bananas if you prefer. Serve with noodles.

Ingredients

  • 4 chicken fillets
  • 2 onions
  • 2 garlic clove
  • 1 broccoli
  • 1 sweet red pepper
  • 1 sweet green pepper
  • 2 tblsp olive oil
  • 2 bananas
  • Pinch seasoning
  • 2 tblsp sweet chilli sauce

Method

  • Trim the chicken and cut into small bite size pieces. The smaller you cut it the quicker it cooks for you
  • Peel, quarter and slice the onions thinly. De- seed and slice peppers
  • Heat oil in a large wok or frying pan. Add onions, stir for 2 minutes, add the chicken and garlic
  • Cook for 5 minutes
  • Cut, broccoli florets, fairly small. Add to chicken, stir
  • Add peppers, stir fry, cooking for approx. 7 minutes until chicken is cooked
  • Add sweet chili sauce
  • Serve in 4 warm bowls. Keep warm
  • Heat rest of oil in the same pan or wok. Slice bananas diagonally into 12 slices
  • Quickly pan fry on both sides. Serve on top of the stir fry
  • Serve immediately with noodles if required
