Full of nourishment. Keep small bags of frozen sea food in your freezer (these can be purchased in supermarkets and have a variety of seafood in them). Use, haddock, salmon, smoked salmon, cod, prawns, lobster or crab meat, mussels etc. Serve with chunks of brown crusty bread.

Ingredients
- 1 tblsp oil
- 100 g bacon lardens
- 1 medium onion (finely chopped)
- 650 ml fish stock
- 500 g waxy potatoes (peel cut 2cm dices)
- 400 g fish (salmon, cod, prawns, sea fish)
- 2 tblsp herbs finely chopped (dill, parsley, tarrogan)
- 250 ml cream or natural yoghurt
- 1 pinch seasoning
- 25 g softened butter
Method
- Heat oil in a frying pan
- Fry lardens for 3 minutes
- Chop and add onions, cook until light golden colour
- Add stock and potatoes which have been cut into 1cm size pieces, bring to boil
- Reduce heat, cook potatoes until soft
- Trim, skin, de bone and cut into small pieces, add to above with herbs, cook gently for 10 minutes until fish is cooked
- Reduce by boiling rapidly for a few if liquid is very thin
- Add cream or natural yoghurt , off the heat
- Heat but do not boil
- Taste and season as necessary
- Stir in butter gently (optional)
- Serve with home made brown bread
- To balance the meal, add any diced vegetable along with potatoes
