coconut riceCoconut rice is an amazingly flavoursome rice that is so easy to make and goes well with most curry dishes. It is also full of great nutrients that are equally good for children and adults.



Servings: 4


  • 2 cups Basmati rice
  • 2 cups coconut milk
  • 2 cups cold water
  • Pinch salt


  • Rinse the rice under cold water. Place in a saucepan
  • Add coconut milk and water. Bring to the boil
  • Turn the heat off, season and place a tight fitting lid on the saucepan. Leave for 25 minutes without removing the lid
  • Use a fork to fluff up the rice. Serve immediately
  • Cool down any leftover coconut rice immediately and refrigerate
