Delicious at lunchtime or dinner time, use the cooked roast beef from the Sunday joint.

Serves: 4

  • 1 tblsp cornflour
  • 1 tsp cayenne pepper
  • 3 tsp cajun spice
  • 12 ozs beef (round steak)
  • 1 tblsp vegetable oil
  • 1/2 green pepper (cut into strips)
  • 75 g celery (cut into to strips)
  • 1/2 yellow pepper (cut into strips)
  • 1/2 red pepper (cut into strips)
  • 1/2 courgette (cut into strips optional)
  • 4 tortilla wraps


  • Mix the cornflour , cayenne pepper and cajun spice together
  • Place in a bowl
  • Add the beef strips to the spice mix
  • Stir
  • Heat the oil in the frying pan
  • Shake the spice mix off the beef as you add them into the frying pan
  • Cook for 5 -7 minutes, turning over a few times
  • Add vegetables and cook for a further 7 – 10 minutes stirring a few times
  • Heat up the wraps in the microwave or dry fry in a frying pan
  • When meat is cooked and tender, fill the four wraps
  • Fold up two sides and roll up the wraps
  • Serve immediately with a salad, baked potato or potato wedges
