fresh tomato soupA gorgeous looking, tasty tomato soup that will keep you going until teatime. It can be stored and reheated, so nothing goes to waste. Throw in some tasty toasted croutons, and maybe a slice of crusty bread and voila!



Serves: 4


  • Bread toasted
  • 4 x large tomatoes
  • Handful of Basil
  • Salt/pepper from the store cupboard
  • Tin of tomatoes
  • 2 vegetable stock cubes
  • Sugar (a pinch)
  • Garlic clove
  • Onion 1 medium
  • Celery 1 stick
  • Olive Oil


  • Set oven to 190c and bake halved tomatoes adding half of the oil with the seasoning and a pinch of sugar for 1 hour
  • Add onion, garlic and celery to a hot pan with the rest of the olive oil until soft
  • Add chopped basil and continue cooking for a couple of minutes now add the rest of the ingredients including the baked tomatoes to the pan and bring to the boil
  • Simmer for 20 minutes, or until all vegetables are soft
  • Puree the soup with a blender when cooled, reheat to serve
