Frittata with chickpeas, onion and cheese


This is a great recipe to use up your store cupboard ingredients. A delicious quick, main meal, lunch or supper dish. A frittata is an Italian flat omelette with fillings of your choice. My choice of fillings include chickpeas although these can be omitted and tomatoes, bacon, ham etc or any vegetables that need using up can be used.

Total time: 35 minutes


  • 6 eggs
  • 75 mls milk
  • 1 can chickpeas (drained)
  • 2 onion (peeled and diced finely)
  • 100g cheese (grated)


  • Oven Temperature: 325ºF – 160ºC – Gas Mark 3 – Moderate
  • Beat the eggs with the milk
  • Add the drained chickpeas, stir
  • Heat a tablespoon of oil in a medium frying pan, add onions, fry for 3-4 minutes, add egg mixture
  • Turn down the heat after 5-7 minutes
  • Use a spatula to check if the underneath of the frittata is a nice golden brown
  • Sprinkle the cheese on top, place in the pre heated oven for 10 minutes or until the frittata is set and golden brown
  • Slip onto a warm platter or plate
  • Cut into wedges, serve hot with salad or vegetables of your choice
  • As an alternative, use any chopped leftover cooked vegetables
  • Add to the egg mixture and continue as per recipe.
