Green Thai chicken curry

This is a really easy curry to make, a little sweeter than the red chilli curry and just as delicious. Chillies have many nutritional benefits – amazing how children will love the taste if introduced early to them. The green chilli paste can be bought in jars but you can of course make up a batch of the paste yourself.

  • 1 yellow pepper (finely chopped)
  • 4 chicken fillets (or thigh or legs)
  • 1 tablespoon Thai paste (green, yellow or red)
  • 1 Onion (peeled and finely diced)
  • 1 tablespoon lime juice (and zest)
  • 1 tin coconut milk (400mls)
  • Sugar


  • Dice chicken
  • Saute off onions in a pan
  • Add Thai paste, lime juice and zest, stir
  • Add chicken, make sure chicken is coated in the paste
  • Add coconut milk
  • Bring to the boil
  • Turn down heat and simmer for about 15 minutes or until chicken is cooked
  • Serve in a bowl with rice
  • Saute off onions in a pan
  • Add peppers, stir for 3 -4 minutes with onions
