lamb koftasLamb mince is available quite readily at the moment.  Lamb Koftas are a variation of the beef meatball with a few delicious spices added to create a fusion of flavours.  If you are having difficulty finding the lamb, use beef, pork, chicken or turkey mince. Again if you prefer to use an alternative meat, make sure to change on your shopping list.

Total Time: 30 minutes

Ingredients

  • 250 g lamb mince
  • 50 g breadcrumbs
  • 1 medium egg
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 onion

Method

  • Place all the ingredients in a bowl. Stir well
  • With wet hand divide the mixture into 8, shape into balls
  • Leave in refrigerator for at least one hour
  • Bake in the oven for 15 – 20 minutes
  • Serve in toasted wholewheat pitta breads with a salad and yoghurt and mint dressing
  • Use beef, pork or chicken mince if preferred
