lemon and parsley yoghurt dressingThis simple dressing to serve with my ‘Dip in Dip out’ salad will use up yoghurt and lemons left over when purchased for the pancakes and chowder.

Total time: 5minutes

Ingredients

  • 1 cup yoghurt – low fat
  • 3 tblsp lemon juice
  • 2 tblsp chopped parsley
  • 1 tblsp canola oil (rapeseed oil)
  • 1 clove of garlic (minced)
  • Pinch sea salt and black pepper

Method

  • Simply whisk all ingredients in a bowl and pop in the fridge for about an hour
