Mexican chilli and lime burgers

Mexican cookery is known for its colourful food including corn and chillies. Chillies pack a big punch of flavour and nutrients. Good for reducing arthritis inflammation and pain.

Ingredients

 

 

 

  • 1 red chilli pepper (deseeded and finely chopped)
  • 50g bread crumbs
  • 300g mince beef (lean)
  • 1 medium egg  (beaten)
  • 60g cheddar cheese (cubed finely)
  • 1 onion (finely diced)
  • 1 fresh lime (zest and juice)

Method

  • Oven Temperature: 325ºF – 160ºC – Gas Mark 3 – Moderate
  • Place all the ingredients in a big bowl and mix well
  • Divide into 4 or 8 and shape into burgers
  • Place in the fridge for 10 minutes
  • Shallow fry in hot oil until brown and cooked (about 15 minutes). Turn once
  • Alternatively fry until brown and place in a hot oven to continue the cooking process
  • Serve in a bread roll or tortilla with tomato salad and guacamole.
