The tin of beans not only adds extra fibre and nutrition to this spicy Mexican dish, it also creates a creamy sauce. Choose to serve with any one or two frozen vegetables from shopping list.

Total time: 30 minutes

Ingredients

  • 1 tin Heinz beans
  • 1/2 yellow pepper
  • 450g mince beef
  • 100g cheese (grated)
  • 1 cup brown rice
  • 2 teaspoon chilli powder
  • 1/2 green pepper
  • 2 tablespoon sweet chilli sauce
  • 1 onion
  • 1/2 red pepper
  • 1 tin chopped tomatoes

Method

 

  • Add onions and peppers
  • Cook until mince amd vegetables are cooked
  • Add chilli powder, beans, chopped tomatoes and sweet chilli sauce
  • Stir and turn up the heat for for 5 minutes
  • Remove from heat
  • Taste and season as required
  • Add more chilli powder if you prefer a hotter dish
  • Place in a heatproof bowl with rice, top with cheese and grill until cheese melts
