Oatmeal roasted fillet salmon

We all know that oily fish contains the right type of fat (Omega 3), plus cooking the salmon with the oats coating gives a double whammy of nutrients and a fabulous mixture of flavours and texture. Serve with sauteed potatoes, home fries  and any green vegetable or salad.

Total time: 30 minutes


  • 4 salmon fillets
  • 200 ml tomato juice (canned)
  • 1 tablespoon sunflower oil
  • Water
  • 1 fresh lime juice and zest
  • 1/2 chilli deseeded and chopped finely
  • 2 tablespoon fresh parsley (chopped)
  • 50 g oatmeal


  • Oven Temperature: 350ºF – 180ºC – Gas Mark 4 – Moderate
  • Pre heat Oven 180c
  • Place salmon on roasting tray
  • Mix together, oatmeal, parsley, chili, lime and oil. Spread on top of salmon fillets
  • Mix, tomato juice and enough water to 2cms high in deep roasting tin. Place salmon into tin. Season top of salmon with cracked pepper
  • Bake in the oven for 10 -15 minutes or until salmon is cooked
  • Serve on warm plates use the juices as a sauce. Reduce if necessary
  • Serve with a green salad or vegetable and baby boiled potatoes
