Pan fried citrus glazed salmon

salmonMarinating fish in either lime, lemon or orange zest and juice for one hour gives the fish a gentle refreshing flavour and creates a glazed appearance when it is gently pan fried. Without going into details – we all know the health benefits of oily fish.

 

Approximate cost: £4 or £1 per portion

Serves: 4

Total time: 80 minutes

Ingredients

  • Ground black pepper (cracked preferably)
  • 4 salmon fillets
  • 1 tablespoon oil
  • 1 onion (peeled and sliced)
  • 3 fresh limes (juice and zest)

Method

  • Place the zest and juice of the lemon with the onion slices into a shallow dish
  • Place salmon fillets ontop of lime and onions
  • Season
  • Cling film and leave to marinade for one hour in a fridge
  • Heat a heavy based saucepan, when very hot, add oil, when sizzling add fish, top side down
  • Cook for 8 – 10 minutes, flip over gently and continue until cooked. Turn down heat
  • Serve on a warm plate with a citrus sauce or with parsley sauce. Alternatively serve with a citrus salad
