Serves: 6

Total time: 70 minutes


  • 200g pastry (shortcrust)
  • 6 bacon slices (diced)
  • 1 onion (diced finely)
  • 4 eggs
  • 100 ml milk
  • 100 g hard cheese (eg. cheddar)
  • 2 tomatoes (sliced)


  1. Pre-heat oven 190C, Gas 5
  2. Roll out pastry, bake blind for 15 minutes
  3. Remove paper and beans (for blind baking), brush with a little beaten egg and place back in to the oven for 10 minutes
  4. Whilst pastry is in the oven dry fry bacon dices with onion for 5-7 minutes
  5. Beat eggs, mix with milk then add cheese and onions to bacon mix
  6. Gently pour into the pastry case and decorate with tomato slices
  7. Pace on a ray and place into pre-heated oven. Cook for 25-30 minutes or until the mixture is cooked
  8. Remove from tin, service hot or cold with green salad and boiled baby potatoes
