Quick tomato and chickpea soup

This soup is easy to make and when served with bread and salad it makes a sound nutritional meal. Blend using a stick blender if you feel the children in your family favour a smooth soup. The chickpeas can be replaced with a tin of baked beans.

Ingredients

  • 400g chickpeas (canned) (1 tin drained)
  • 1 onion (finely chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary (chopped)
  • 1 litre water
  • 400g chopped tomatoes
  • 1 garlic (Clove)
  • 1 chicken stock cube (vegetable if vegetarian)

Method

  • Saute garlic and onion in oil until soft
  • Stir in all ingredients including stock cube
  • Bring to boil, simmer for 10 minutes
  • Taste and adjust with seasoning if necessary
  • Blend if you prefer a smooth soup
  • Serve with cheese toasties.
