Serves: 4

Total time: 40 minutes

  • 4 tblsp self raising flour
  • Seasoning
  • 2 tblsp soft brown sugar
  • 200 ml water
  • 2 Cup basmati rice
  • 1 tblsp white wine vinegar
  • 200 ml sparkling water
  • 2 tblsp tomato sauce
  • Sauce:
  • 4 pinches of turmeric powder (optional- for colour)
  • 300 g cooked turkey or chicken (diced)
  • 1 tblsp cornflour (mixed with some water)
  • 3 spring onions (diced large)
  • 1/2 pineapple (peeled, cored and diced)

  • Cook rice according to the packet. In the meantime:
  • Sieve SR flour and turmeric into a bowl, season and add enough sparkling water to make a batter that holds the Figure 8
  • Spoon turkey dices into the batter. Remove basket in the deep fat fryer and gently place in battered turkey, cook on high until golden brown. This will have to be done in batches
  • Drain on absorbent paper. Make sauce as turkey is cooking
  • To make sauce:
  • Place all ingredients into a saucepan, stir well and bring to boil. Stir frequently
  • Taste and adjust as required. May need an extra pinch or 2 of sugar, Adjust the consistence also if required
  • Serve with a green beans or salad
  • Tip: If you prefer use a tin of pineapples instead of the fresh pineapple and the 200mls water
