bread sauceBring a little bit of Medieval history into your Christmas meal with one of the oldest sauce recipes. Start freezing crusts and stale bread well before Christmas Day to reduce the shopping bill.

  • 25g butter
  • 1 large onion (cut in half)
  • 500ml milk
  • 3 bay leaf
  • 110g breadcrumbs
  • 8 peppercorns
  • 15 whole cloves


  • Stick the cloves into the onion
  • Place all ingredients except for breadcrumbs into a saucepan
  • Bring to boil
  • Leave to infuse for up to 2 hours
  • Remove onion, bay leaf and cloves
  • Add breadcrumbs, stir and reheat for breadcrumbs to absorb the infused milk
  • Taste – add up 1 teaspoon of ground cloves if required
  • Serve warm or cold with traditional roast turkey.
