Turkey/ham fried rice Chinese style

Turkey slices from the deli counter in the local butcher or supermarket are quite acceptable. Alternatively for those of you who wrapped the last remaining few slices of the Christmas turkey and placed it in the freezer – now’s the time to use it up.

Serves: 5

Total time: 30 minutes

Ingredients

  • 1 carrots (peeled and shredded)
  • Half teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 1 onion (peeled and sliced)
  • 2 medium eggs (beaten)
  • 3 cups cooked rice
  • 2 garlic (clove)
  • Half level teaspoon freshly ground white pepper
  • 3 tablespoons of oyster sauce
  • 2-3 cups cooked turkey (chopped into chunks)
  • 1 cup frozen peas

Method

1. Heat the oil in a large wok and fry the onion for 2 minutes. Add the garlic and fry for 30 seconds

2. Add the cooked rice to the wok and fry for about 5 minutes, or until hot

3. Add the turkey, peas and the veg and fry for a further 4 minutes

4. Move the contents of the wok over to one side and and add the eggs, cooking until they have set

5. Mix in with the rice and then add the soy and oyster sauce and cook for 2 minutes then add the sesame and pepper

6. Mix through and serve!
